He’s a household name in the Cape – and, in fact the entire country – for good reason! Chef Reuben Riffel has been thrilling diners with his bold, flavourful dishes since he opened his first eponymous stand-alone eatery in Franschhoek all those years ago.
Twelve years later, he now owns four restaurants, has written a cookbook, has appeared on numerous TV cooking shows, and has even hosted Prince Harry. Yet despite all these accolades and achievements, Reuben remains dedicated to his craft – namely sourcing the finest local, seasonal ingredients and turning them into honest yet refined dishes that could stand up to some of the most raved-about food in the world.
His brand-new menu, unveiled two weeks ago, is as always centred on top-quality local ingredients and artisanal products. Says Reuben: “I believe in farm-to-table, ingredient-driven menus, and this spring’s selection is no different. I have outsourced interesting local artisans who share my values and I’m sure that you will taste the integrity in their products”.
To whet your appetites, here’s a peek of some of the dishes on offer:
- Table toppers (meant for sharing): winelands prosciutto, with belnori goat’s milk and boerenkaas, sourdough, truffled honey
- Starters: warm cured Franschhoek trout, with avocado, Kikkoman-honey, orange, vanilla compote, lime crème fraîche and beet meringue; beef tartare, with ponzu-cured cucumber, makataan preserve, spicy ketchup rocket pesto, Parmesan, mushroom marmalade and sous-vide egg yolk
- Mains: signature pork belly, with sesame crunch pork rib, apple-tamarind, sweet potato and banana purée, pancetta crisp and chili-ginger caramel; line fish of the day, with smoked carrot purée, saffron linguini, mussels, squid, smoked fennel veloute and sundried tomato relish
- Desserts Granny Smith Tarte Tatin, with vanilla panna cotta, apple sorbet, salted caramel and hazelnut sponge; and Cape Malay Koeksister, with spiced caramel schemer, toasted coconut and lime ice cream, cinnamon crumble and semi-preserved pineapple
