As the son of a chef and confectionary teacher, chef James was exposed to cooking from a young age. Studied at Silwood School of Cookery. Worked his way up the ranks at La Colombe before temporarily leaving to work in Raymond Blanc’s Restaurant Le Manoir aux Quat’Saisons, Oxford.
