The spellbinding progression from sunset to twinkling starlight adds another dimension to the panoramic Franschhoek views that Haute Cabrière does so well. Perched high above the valley (at the start of the Franschhoek Pass), their glass-fronted Terrace restaurant gives diners a grandstand view all the way to Table Mountain and is a favourite year-round spot for leisurely lunches. The new summer dinner series maximises the magic, with an intimate four-course set menu experience that encourages you to linger deliciously through long and languorous summer weekend evenings, a glass of Pierre Jourdan cap classique in hand.

Chef Charlton Prins who has been part of the Haute Cabrière team since 2019 (and head chef since 2022), pours his passion for storytelling into every dish. “For me, cooking is about connection,” he says. “It’s about bringing together the seasons, the region, and the people around the table.”

For the summer dinner series he’s put together a carefully balanced set menu of Haute Cabrière classics. Combining seasonal summer flavours and classic French influences, each dish is designed to pair with one of the estate’s wines (which are celebrated especially for their varied expressions of Franschhoek terroir in pinot noir and chardonnay).
