Dramatically framed against the Helderberg mountains, Waterford Estate’s terracotta roof tiles and massive archway into a wide courtyard may evoke Tuscany, but the family-owned wine estate has its roots firmly in the vine-friendly soils of Stellenbosch’s Golden Triangle. It breathes the elegant cabernet sauvignons that these prime slopes are renowned for, but also speaks of family and warmth, with myriad stories to tell.

Inviting you in to share these stories, Waterford Estate has put together an exclusive experience for Inside Guide readers, limited to just 10 guests. This special day of excellent wine and food welcomes you into the heart of the Waterford Estate family, meeting the team, who share their inside insight as you sip, swirl, explore and feast.

Waterford Experience Wine

Walk through the archway into the sheltered courtyard to be welcomed with a glass of bubbly by the central fountain as you meet the team (Waterford Estate only makes 4 000 bottles of its Blanc de Blancs Cap Classique a year, mostly for celebrating special occasions like this).

A cellar tour comes first with cellarmaster Mark le Roux treating you to a tank or barrel tasting, a first-taste preview of an about-to-be released vintage before bottling, while the first fermentation of the new harvest gently burbles in barrels around you.

In the cool of the Grenache Cave surrounded by barrels, a tasting table is all set up for a vertical wine tasting. Three vintages of the Waterford Kevin Arnold Shiraz, followed by three vintages of the Waterford Estate Cabernet Sauvignon… This is where the stories come to the fore, different vineyards, harvests, and blends of the various blocks, being at the heart of Mark’s winemaking expertise.

As an additional spoil, the session concludes with a tasting of The Jem, Waterford Estate’s iconic flagship red blend. This stunner of a big red is a magnificent blend of eight varieties, all of which are grown on the estate, and is only made in years when they all come to the party (it scored a whopping 97 in Tim Atkin and was voted in the top 1% of wines in the world by Vivino.)

Emerging from the cool of the cellar, it’s time (weather permitting) to climb on board the open safari vehicle and explore Waterford Estate’s vineyards to get an up-close sense of the terroir and soak up the views.

Returning to the shaded tables of the inner courtyard, a three-course lunch at SALT awaits. Craig Cormack and Beau du Toit’s simply elegant restaurant is named for Craig’s collection of over 100 salts from around the world and celebrates the subtle alchemy played in cooking by this essential ingredient (more fascinating stories on the menu). Head chef Brent Williams has created a simple and delicious menu that pairs perfectly with a glass of the estate’s wine (they tasted steaks from a number of sources to find the one that best paired with the Estate Cabernet Sauvignon) and concludes (spoiler alert) with a chocolate dessert drizzled with a divine salted caramel.
