Ángel León x Alain Roux: A Six-Star Four-Hands Dinner at Amura
Two world-renowned chefs cook together for one night only.
Chef Ángel León’s pioneering marine dining exploring the South African oceans at Mount Nelson’s Amura has already earned the restaurant global accolades. Now it’s bringing a (Michelin) star-studded collaboration to Cape Town this August, as world-renowned chef Alain Roux flies in for a four-night culinary residency, culminating in a resounding and rare four-hands dinner with Spain’s renowned “Chef of the Sea”.
The limited-seat experience brings together traditional French cuisine with the new-wave Spanish flavour of chef Ángel’s marine-driven philosophy.
From Spain to Cape Town

Amura is the Cape Town exploration of sustainable seafood by chef Ángel, whose ground-breaking restaurant, Aponiente, earned three Michelin stars and the inaugural Michelin green star for sustainability. The Belle Epoque grandeur of the stunningly designed dining space has a softly lit subaquatic feel reminiscent of a resplendent kelp forest, reflecting the maritime theme of the open kitchen with subtle glamour.
French tradition in British gastronomy

Albert and Michel Roux, arriving in Britain in the 1960s, fundamentally changed the country’s relationship with fine dining, introducing classical French technique and rigorous culinary standards to a nation hungry for both. Chef Alain Roux is the custodian of that legacy. As chef patron of The Waterside Inn (the celebrated riverside restaurant founded by his father, Michel) Alain presides over a truly remarkable achievement: three Michelin stars, held continuously since 1985, for 41 consecutive years, an unrivalled feat outside France.
An outstanding culinary residency

Chef Alain takes over the Amura kitchen for the first three nights of his culinary residency and is set to delight diners with his signature French style of cooking, crafted from local South African ingredients. He’ll be joined by acclaimed South African chef Wandile Mabaso of Les Créatifs in Sandton, one of our leading culinary talents. Expect an exquisite six-course tasting menu, including Alain’s signature Truffle Croque Monsieur, a beautifully seared scallop with sweetcorn, lime and an aromatic vadouvan sauce. And experience a dessert classic that has graced the menu at The Waterside Inn for more than half a century, his warm raspberry soufflé.
A star-studded four-hands dinner

On the final evening of Alain’s residency, he and Ángel collaborate on an exceptional experience that brings six Michelin stars together for a first-of-its-kind Four Hands dinner. Celebrating each chef’s culinary identity using exceptional local ingredients and continuing the ocean-dining focus, Alain presents his signature pan-fried lobster medallion with ginger-flavoured vegetable julienne and white port sauce, rooted in classic French tradition. It will be followed by Ángel’s deeply savoury plankton risotto, a dish that perfectly expresses his pioneering interpretation of the sea, and continues through a one-of-a-kind evening of food and curated wine pairings.
