Harvest is over and as the calm days of autumn descend on the Constantia Winelands, it’s time to take a breather. At Steenberg Farm, May is always the month to mark International Sauvignon Blanc Day with a celebration of the cool-climate varietal that does so well on this varied terroir. Just a stone’s throw from the ocean in the scenic Constantia Valley, chef Kerry Kilpin is creating two special menus at Tryn and Bistro Sixteen82 designed especially to highlight the estate’s wines with bold and unusual pairings in her signature mouthwatering style.

The renowned Bistro Sixteen82 sharing-plates menu gets a sauvignon shift for May. A bottle of Steenberg Sauvignon Blanc 2024 is included alongside five dishes designed to share. Hand-cut fish tartare (from Abalobi) with lime aioli, yuzu pearls and sweet basil vinaigrette; wasabi-dusted baby calamari; a mushroom carpaccio with sticky rice and crispy wakame with parmesan, miso and porcini; the harvest-inspired golden baked brie with a grape gel, verjuice syrup, with crushed macadamia nuts and playful popping candy; and beef potstickers with red cabbage and mangetout salsa. Bold flavours, it’s true, but ones that the wine plays up to with elegant aplomb.

At Tryn a four-course menu takes you on a delightful pairing journey that explores the versatility of the cool-climate varietal. Enjoy the classic Steenberg Sauvignon Blanc 2024 with a masala-dusted calamari with yuzu emulsion; the Steenberg Barrel Fermented Sauvignon Blanc 2023 with a deconstructed steak tartare with quail egg and pickled salad; flagship The Black Swan 2024 paired with veal escalope with arancini, salad and an artichoke velouté; and to complement a dessert of lime cremeux with berries, spicy raspberry sorbet and crushed meringue, the Steenberg Sparkling Sauvignon Blanc. An elegant procession of flavours in beautifully balanced Steenberg style.
