South African Refined-Dining at Bloom Restaurant by Chef Sebastian Smith
An inspiring narrative of heritage and terroir on the plate.
By Inside Guide • 10 July 2026
A fresh, refined-dining experience unfurls each season at Bloom… Helmed by chef Sebastian Smith, the team draws inspiration from the indigenous gardens, leafy Helderberg surrounds and evolving seasons to offer a true taste of South African flavours.
Inspired by the natural rhythm of the surrounding gardens, the intimate 30-seater dining space opens onto a tranquil terrace, and has been beautifully decorated in tranquil earth tones, with bespoke art installations and striking murals by Bone Studio. It’s sophisticated yet warm and welcoming; rooted yet refined, with a dedicated team ensuring every guest feels at home.

South African flavours with modern finesse

Chef Sebastian Smith delves deep into South Africa’s heritage and terroir as inspiration for his menus and reveals a commitment to sustainability and seasonality on every beautifully presented plate. Sourcing from local organic gardens, small-scale farmers and dedicated artisan producers, he’s creating a sense of place with an inventive and evocative touch, whether through a delicate take on a Cape Malay classic or a vibrant celebration of the bounty of The Winelands.

While the menus evolve at nature’s pace, winter sees the comforting warmth of dishes such as sourdough vetkoek with beef tartare and chakalaka; and a hearty Chalmar beef with oxtail and mushroom potjie with Jerusalem artichoke. When spring takes over the landscape and leans towards summer, flavours freshen and you might find the delicacy of quail, leek and Karoo saffron vichyssoise, or Lourensford trout with asparagus. Choose between the four- and six-course menus (dietary requirements are accommodated on request), and finish with delicate petits fours.
Wines to pair

Thoughtfully chosen wine pairings are optional but recommended, ranging across the region’s celebrated vineyards from Groote Post on the West Coast to Lowerland in the Northern Cape and a wealth of different terroirs in between.

Intimate and inviting, Bloom takes guests on an immersive sensory journey across South Africa’s diverse culinary landscape.
