Marble Restaurant Opens at the V&A Waterfront in Cape Town
Live-fire cooking and luxe interiors set the Cape Town food scene alight.

Chef David Higgs’ Joburg restaurant has been a celebration of fire-cooking, carefully sourced meat and quintessential South African flavours since it opened in 2016. Now he and entrepreneur Gary Kyriacou have brought Marble to Cape Town and created a hot, new dining destination.

The historic Union Castle Building at the heart of the V&A Waterfront has been completely reimagined, crowned by Marble on the top floor with wrap-around rooftop glass-walled views of Table Mountain, the working harbour and the Atlantic Ocean. Offering a real destination feel, the restaurant continues the signature Marble style – with a touch of Cape Town added to the mix. “Marble is about the experience, the vibe, when you walk in there’s a great energy,” David says.

A fire-driven menu infused by coastal influences sees the iconic Grillworks at centre stage, backed by two Jospers, and a wood-fired oven for the famous Marble focaccia.They’ve added lighter Mediterranean dishes to the menu such as snoek pâté with magwenya, and lamb and beef tartare with pickled waterblommetjies. Mains feature Marble’s celebrated wood-fired Chalmar ribeye, alongside new creations like mussel paella and line fish with burnt leeks and roasted fish bone sauce.
Heading up the new Marble team is chef Matt van Niekerk, “The concept of live-fire cooking may not be new anymore, but the way we do it at Marble is always a fresh experience. That’s what excites us about Cape Town,” he says. “Fire has a way of bringing people together – it’s where stories are shared, ideas come to life, and connections are made.”
Style icons

Designed and curated by interior director Irene Kyriacou and Redecco, the interiors reflect Cape Town’s natural elements—wind, sea, and earth—while floor-to-ceiling glass facades provide breathtaking 360° views. The design is complemented by bespoke art, sophisticated textures, and locally inspired elements. “The space evolves throughout the day,” explains Irene. “Whether it’s lunchtime, sundowners, or an evening experience, the design adapts to Cape Town’s moods—from stormy days to vibrant summer sunsets. The outdoor terrace is an extension of the dining and bar area, designed to amplify the beauty of our surroundings without overshadowing them.”

The wraparound patio is already the spot for glam sundowners featuring Marble’s legendary cocktail energy. With its focus on premium quality, excellent service and luxury finishing, the 220-seater Marble Cape Town is one to book this summer.
Good to know There’s also a bar snack menu for light bites to go with the glam cocktails.
