An everyday gourmet feast of fresh and foraged flavours
Floor-to-ceiling windows looking over sculpture-studded fynbos gardens and a dam to the Stellenbosch mountains make Cavalli a wonderful destination to enjoy the “everyday gourmet” à la carte menu in winter. Not to mention the roaring fire keeping things cosy. Chef Lucas Carstens’ seasonally driven menus are uncompromisingly “green”, with produce foraged from the gardens and sourced from local farms (chosen for their sustainable and ethical farming methods) to create perfection on a plate. Think wagyu short rib with herenbone; celeriac pavé with beurre noisette; and tuna with daikon radishes and pear among other deliciously fresh flavours.
