The Nobu philosophy reimagined – with local twists and a visionary new female head chef.
When it comes to top-drawer seafood, Nobu has been setting the bar for decades. Combining the precision and elegance of Japanese culinary tradition with the profusion of ingredients and flavours of Peru, masterchef Nobu Matsuhisa (for whom the restaurant is named) has made this perennially exciting fusion his own, with over 30 high-profile restaurants across the globe.
Descending the sweeping staircase to the main dining room at One&Only Cape Town, you’re embraced by the sleek and sophisticated luxury of Nobu’s double-volume space, and your eyes drawn to sparkling spring sunlight playing on the canals and changing cloudscapes over the iconic view of Table Mountain.
Always evolving, Nobu Cape Town, renowned for its impeccable fusion of Japanese culinary traditions and South African flair is embarking on a fresh new chapter as it welcomes its first female head chef…
Introducing chef Nicky King
A Capetonian through and through, chef Nicky King was raised and trained in the city. Her journey includes stints aboard global cruises, navigating the world of five-star hospitality and even along the River Thames. This global experience has shaped her signature style of cooking and taught her the many secrets of the culinary arts before coming home to Nobu Cape Town, where she’s been absorbing its authentic Japanese techniques for the past seven years.
Stepping up to the plate
Nobu’s signature ethos of simplicity-meets-sophistication gets a new personal touch as Nicky pushes boundaries, drawing inspiration from South Africa’s diverse culinary heritage and the vibrant ingredients and flavors unique to Cape Town.
Expect fresh twists on beloved classics like miso black cod (a local favourite) and Kingcrab Amazu Ponzu (her personal favourite), alongside inventive new creations that celebrate the Cape’s local agriculture — think sustainably sourced seafood, native botanicals and the region’s most celebrated wines.
Omakase with a local focus
Nobu devotees can look forward to a brand new omakase menu launching in the new year as Nicky creates a more immersive dining experience, promising not just a meal, but a journey of taste, texture, and storytelling. Her first omakase menu as head chef celebrates native produce, flavours and cultures with a classic Nobu twist.
Or go à la carte
Explore the à la carte menu for more classic dishes to add to your Nobu collection of taste memories. There’s a whole raft of delicious options, which include wood-oven-roasted dishes, tempura, kushiyaki skewers and more. Our favourites include the spicy edamame, tuna sashimi tacos, yakimono beef tenderloin, teriyaki yellowtail jalapeño and a dry-miso whitefish dish, or push the boat out and go for the legendary black cod miso.
Put Nobu on your must-visit list to taste for yourself. You will no doubt be bowled over by the experience.
