Started working in restaurants at 16. Enjoyed a stint in London under Michelin-starred chef Jean-Christophe Novelli. Opened Novelli at The Cellars-Hohenort Hotel in 1997. Opened and ran restaurants in Jakarta (Indonesia), Kuala Lumpur (Malaysia) and Sydney.
Opened the original Jardine Restaurant on Bree Street in 2006, which was listed in the San Pellegrino World’s 100 Best Restaurants in 2008 and 2009, while George himself was named South African Chef of the Year in 2007. Opened Jordan Restaurant at Jordan Wine Estate in 2009, and became executive chef, alongside head chef Kyle Burns. Opened Restaurant Jardine in 2016. In 2018, he launched his seventh restaurant, aptly named Seven, with Brendan Thorncroft heading the kitchen.
