John van Zyl

Studied at the Institute of Culinary Arts in Stellenbosch before working with PJ Vadas at The Roundhouse Restaurant for six months. Trained under Liam Tomlin, and served as his head chef at Chefs Warehouse & Canteen from its opening in 2014 until mid-2015.

Following a six-month sabbatical, he helped Angelo Scirocco open Urbanologi in Johannesburg, then served as head chef at Thali from its opening in 2016 until April 2018. Travelled and worked in Asia and Europe, before returning to Cape Town to become a private chef.

Launched Melting Pot at Marrow with Stefan Roos (ex Terroir, Thali, Kole and Deeg) and Sage Fell.

For authentic cuisine Thali. Now I can say so, as I’m not the chef there anymore. Although not quite authentic, I still think it’s a really well-executed theme.
