Trained at the Institute of Culinary Arts in Stellenbosch, where he was awarded a bursary to study at the Culinary Institute of America. Moved to London, where he cut his teeth at Quo Vadis (with Marco Pierre White at the helm) followed by stints at Michelin-starred restaurants Hambleton Hall (under Aaron Patterson) and Zafferano (under Giorgio Locatelli).

Became head chef at Automat in Mayfair (during which time the restaurant earned top accolades).

Returned to South Africa in 2007, and was appointed executive chef at Grande Provence Heritage Wine Estate.

Became executive chef of Liz McGrath’s The Collection, overseeing five kitchens across the portfolio, and winning numerous awards.

In 2018, he launched FYN, a fine-dining restaurant in Cape Town’s CBD.
